If they accidentally wake up and see bunch of humans next to him, he will go wild and attack.
That, and also to protect the eyes from dirt, debris, direct sunlight etc. A tranquilised lion doesn't always go under with it's eyes completely closed. The eyes are also generally treated with an ointment or drops while they're under as from what I can remember, the cover obviously has to be removed before the animal awakes, or while it's still very groggy and this provides an additional layer of protection in that phase. I remember this from a documentary I watched on translocation of lions from one area to another. A vet would more accurately explain, I'm just going on what I've seen on a program.
Watched this specifically being explained on that documentary about lions, but I'd imagine the same applies to all as I have seen the eye protection and ointments applied in elephant and rhino operations.
